It’s hot! In almost every other state you will experience four seasons in a given year. In So Cal, you get two: hot and hotter. During these especially warm months, it’s hard to justify spending hours in a hot kitchen when your family is just going to pick at the meal and leave their plates half empty. Who can eat a big meal when the weather outside is stifling?In order to ensure we still get some form of nourishment yet keep the house moderately cool, we have resorted to eating lots of salad.

While there are tons of salad recipes out there, my husband prefers salads made with iceberg lettuce. There is something about the water content of the leaves which he finds refreshing.

For the fun of it, we thought we’d share our favorite salad ‘recipe’. The ingredients are very simple and yet flavorful.

Kitchen Sink Salad

Iceburg Lettuce, shredded
Cilantro, finely chopped
Fresh Spinach Leaves
Tomato, finely sliced
Cucumber, halved and finely sliced
Red Bell, finely sliced
Onion, finely sliced
Black Olives
Chicken Lunchmeat, diced

Dressing:
Equal parts blue cheese dressing & homemade salsa, approximately 1/2 cup each
2 tbsp. Worcester Sauce

Directions:
Being salad, this is as easy as it gets… Chop and slice all veggies. Chop lunchmeat. Toss the ingredients into a large bowl. Add the ingredients for the dressing directly into the salad bowl (no need for pre-mixing) and toss the salad. Serve salad with freshly baked bread.

See how easy that was? It’s no wonder this becomes our favorite meal during the summer. It takes about ten minutes to prep and feeds all of us well. With fresh bread, you can’t go wrong!

  1. My husband hates iceberg so we have to do spinach. I prefer Romain. I like the crunch. I adore Iceberg in Mexican dishes. It’s about 50 degrees in Tennessee today. No more cold salads for us!

  2. My mother made an amazing taco salad on hot days when we were kids.

    Brown ground beef and let cool while you assemble salad

    Romaine or iceberg lettuce
    Red onions diced or sliced thin
    Bell peppers
    Tomatoes
    Grated cheddar cheese
    Sour cream
    Salsa

    Toss ingredients and then mix in ground beef and crushed tortilla chips
